This is by far the tallest corn I have ever grown! It must stand over 10 feet tall now. I have it growing in a raised bed and I think it is enjoying the layer of bunny fertilizer that lines the bottom of the bed. I plan on harvesting our first few ears this weekend for dinner when everyone will be here. Yum! There is nothing like homegrown corn!
I have read two different opinions on when corn should be harvested. I have always heard to have your pot of water ready to go as you pick and shuck your corn. Recently though I read (somewhere, I always forget where I read these things!) that the sugars in the corn are actually in the corn the most in the morning and so that is when the ears should be picked for the optimum sweetness. Any opinions out there on when is the best time for harvesting corn?
If it’s grown in your garden, it’s a bazillion times better than what you get in the store no matter WHEN you harvest it! Yum!

I used to work in produce and the first comment is right, garden corn that has not been stored for days and driven even across the county is fantastic!
That said, yes, in the morning the corn has the most moisture and hence the most sweet crunch. When I was a kid my mom would clean the corn the uncles dropped off at lunchtime and toss it in a sink full of cold water to stay moist (or drown bugs) either way it was really good at supper and cut fresh that morning.

I’m just hoping to get my corn in before the first frost! Most of it is about five feet high. Most of the tassles are up. We’ll see…
My dad was an Iowa boy and he always told me the pick-and-cook-immediately thing, but that could just be folklore. I recently also read about harvesting in the morning, but it was for lettuce so that it would be sweeter. Ditto for herbs, since the oils are up in the leaves more, so I guess it could be the same for corn. We just had some tonight that was picked at least 3 days ago and it was the sweetest I’d had all year – it was local, organic and just so tender, but I didn’t grow it myself. I bet yours will taste as good as it looks! Just make sure to pick it before the raccoons decide it’s ripe.
